Chef Gilly & Chef Sam

Chef Gilly brings over a decade of fine dining experience in Europe before making his way to Ghana’s central coast. A fusion chef with strong classical European training, he works closely with Elmina’s fishermen to select the morning’s catch and sources spices from local Ghanaian growers, allowing the coastline to shape each menu. Alongside Chef Sam, he leads a kitchen that applies fine-dining precision to simple, local ingredients creating food that is deeply rooted in its surroundings and unmistakably expressive of place.
